I bought this for my best friends husband for Christmas. He grew up in Trinidad but had to move to the states before he was a teen. He’s often commented on wishing he had learned to make some of his childhood dishes. I researched cookbooks from Trini for a few weeks before finding this one. It was perfect. When he opened Ed he immediately put everything else down and sat down reading it for 30 minutes. The front of it has some history on Trinidad and then is followed by recipes. His wife had to eventually take his attention from the cookbook so we could go back to out Christmas party, he was so drawn into it! Now, a month later, my friend texts me pictures every time her husband tries a recipe and thanks me for the cookbook.
I am pleased to have this cookbook because the history and blend of cultures in these islands is rather unique. The author describes each of the three primary cultures - Indigenous, plus Christian and Arabic and how their ancestors were brought there as slaves or indentured servants. I wanted to learn about the food traditions through that lens. This is well-written and detailed enough to understand the complexities of the islands history and cultures without being over-whelming. She has adjusted some recipes to use ingredients readily available in markets here is the USA. She also explains those substitutions so you could make the dish in the traditional way if you have access to a market selling the unique Trinidad and Tobago ingredients. For a special touch, she describes various cultural events with a calendar listing the time of year they occur. So you could organize a visit to participate in a chosen event. I love cookbooks that put food in context of its evolution and role in a culture. My only comment on the recipes is that many are spicy hot. I have to omit those hot ingredients but I still enjoyed the flavors of the resulting dishes I made. I also discovered a few different ways of combining some of my favorite ingredients with delicious results.
